Caramel Popcorn

  • 6 quarts popped corn
  • 1 cup butter (2 sticks)
  • 1 cup brown sugar, firmly packed
  • 1/2 cup corn syrup
  • 1 tsp salt
  • 1 tsp vanilla
  • 1/2 tsp baking soda

  1. Melt butter in medium pan and add brown sugar, corn syrup and salt. Stir constantly until mixture comes to a full boil.  Boil for 5 minutes.

  2. Remove from heat and add vanilla, baking soda and nuts.

  3. Pour mixture over popped corn and mix well.  Put into a brown paper bag.

  4. Bake in a 250° oven, shaking every 15 minutes for a total of 45 minutes.

  5. Remove from oven, open bag and let cool.

  6. Store in an airtight container.
