Crumb Coffee Cake

  • 1/2 cup buttermilk
  • 1 1/4 cup flour
  • 1 cup firmly-packed brown sugar
  • 1/4 teaspoon salt
  • 4 tablespoons butter
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 egg lightly beaten


  1. Preheat oven to 375°F. 

  2. If you do not have buttermilk, make your own by mixing 1/2 cup milk with 1/2 teaspoons vinegar and let set until needed.

  3. In mixing bowl, combine the flour, sugar and salt.  

  4. Cut in the butter with a pastry blender or fork until the mixture resembles a course meal.  Reserve 1/2 cup of the mixture for the topping.

  5. Stir the baking powder, baking soda, and cinnamon into the remaining mixture.

  6. In a small bowl, beat the egg and buttermilk together and then add to the mixture.  Stir just until the dry ingredients are moistened.

  7. Poor the batter into a greased 8x8x2 baking pan and spread evenly.

  8. Scatter the reserved topping over the batter.

  9. Bake 30 to 35 minutes or until an inserted toothpick comes out clean.
