Crumb Coffee Cake
- 1/2 cup buttermilk
- 1 1/4 cup flour
- 1 cup firmly-packed brown sugar
- 1/4 teaspoon salt
- 4 tablespoons butter
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1 egg lightly beaten
- Preheat oven to 375°F.
- If you do not have buttermilk, make your own by mixing 1/2 cup milk with 1/2 teaspoons vinegar and let set until needed.
- In mixing bowl, combine the flour, sugar and salt.
- Cut in the butter with a pastry blender or fork until the mixture resembles a course meal. Reserve 1/2 cup of the mixture for the topping.
- Stir the baking powder, baking soda, and cinnamon into the remaining mixture.
- In a small bowl, beat the egg and buttermilk together and then add to the mixture. Stir just until the dry ingredients are moistened.
- Poor the batter into a greased 8x8x2 baking pan and spread evenly.
- Scatter the reserved topping over the batter.
- Bake 30 to 35 minutes or until an inserted toothpick comes out clean.
