Ginger Cake

  • 2½ cups flour
  • 1 cup molasses
  • ½ cup butter or coconut oil
  • 1 egg 
  • 1 ½ teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger
  • ¾ teaspoon salt
  • ½ teaspoon cloves
  • 1 cup boiling water
  • 1 teaspoon vanilla

  1. Preheat oven to 350 degrees, grease one 9 inch pan, sprinkle with flour.

  2. In large bowl mix all ingredients well, then mix 3 minutes on medium.

  3. Pour into pan. Bake for 55 to 60 minutes.

*Can be iced with cream cheese frosting or whip cream.
