Oatmeal Cake

  • 1 ½ cups hot water
  • 1 cup rolled oats (quick or regular) 
  • ½ shortening
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs 
  • 1 1/3 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt 

 

1. Preheat oven to 350 degrees F. Grease and flour a 9 x 13 inch pan.

2. Mix together in a small bowl the following and let stand:
  • 1 ½ cups hot water
  • 1 cup rolled oats (quick or regular)

3. Cream together the following in a separate bowl:

  • ½ shortening
  • 1 cup sugar
  • 1 cup brown sugar
4. Add and mix well:
  •  2 eggs 
5. Combine the following and then add the dry ingredients to the sugar mixture and mix:
  • 1 1/3 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt 
6. Then add the oatmeal mixture and mix until just combined.

7. Pour into pan. Bake for 35 minutes.


Boiled Icing 

Make after cake is baked.

  • 1 cube butter
  • 3 tablespoons evaporated milk
  • ¾ cup brown sugar
  • 1 cup coconut
  • 1 cup chopped nuts (sliced almond or pecans)

1. Boil for one minute:
  • 1 cube butter
  • 3 tablespoons evaporated milk
  • ¾ cup brown sugar
2. Stir in:
  • 1 cup coconut
  • 1 cup chopped nuts (sliced almond or pecans)
3. Immediately pour onto cake and spread evenly.
